Frequently Asked Questions

The First Book of Vegetarian Cooking

Q. Where can I buy "Darifree" an ingredient you use in some of your recipes?

A. Darifree is a milk substitute (made from potatoes) sold in powered form. In my recipes always use the powder as it comes from the package, do not mix it with water. This product was formally called Vegelicious and is manufactured by Vances Foods. You should be able to find it in health food stores, if not give Vance's a call at 800-497-4834 or check out their site www.vancesfoods.com. Other milk substitutes that I have tried, do not work well in the recipes.

Q. Who sells "Veggie Base"?

A. Look in Health Food stores for Instant Vege Base, an all-natural vegetable blend used for flavoring in recipes. It is made by Vogue Cuisine www.voguecuisine.com

Q. I can't seem to find Dr. Bronner's Barley Malt Sweetner.

A. Unfortunately it not made any more. But. . . the good news is CSI has recently purchased the recipe and are now producing it. It is available at only a few health food stores at the present time but it can be purchased direct. CSI's phone number is 760-727-9883. Bronner's Barley Malt Sweetner is now called Nature's Finest and the company assured me it is the original recipe. They have a new website. www.csi-vista.com.

Other calorie free sweeteners are;

Stevia extract (use the white powder) can also be used. Stevia is much sweeter than most sugar substitutes so use a light hand and sweeten to taste. It can be found at health food stores.

Sweet Life is a new product on the US market that is 15 times sweeter than sugar. It is made from the Chinese fruit Lo Han and has been used for generations in China where it is considered a national treasure. It has been approved by the Diabetes Resource Center because it is low glycemic. You can find Sweet Life in some health food stores or contact Renew Life at 800-830-4778 or www.renewlife.com

Q. Is there a substitute that I can use for Burger N' Loaf?

A. Yes, Gimme Lean made by Lightlife comes in a tube and is usually in the frozen food section of your market. Our local Publix carries it. Please do not use another brand as some burger substitutes are not the same consistency and will not work. Your can get Burger 'n' Loaf mail-order from Dixie, USA 1-800-233-3668.
